What is sourdough?

Wild yeast. Mother dough. Natural fermentation. So many names for something so special, yet few people know its real secret. Here it is, straight from the heart of our kitchen.

A living organism

Sourdough is a colony of bacteria and wild yeasts living in symbiosis. It is not just an ingredient: it is alive — it breathes, feeds and changes every day.

Slow fermentation

Our "Niña" ferments for 48 hours. This slow process builds complex flavours and makes the dough lighter and easier to digest than any commercial pizza.

Daily care

Like any living thing, it needs constant attention. We feed it, watch its temperature and keep an eye on how it behaves. It has been part of our family since 2013.

The secret of the flavour

Natural fermentation creates acids that give it that slightly tangy, aromatic touch. It is what gives every pizza a personality of its own.

"Sourdough is not just a technique, it is a philosophy. It means understanding that the best things in life need time, care and respect for natural processes."
— Olivier and Laurent, Pizzeria Primavera
